Hi Wende 🙂 Yes you can do that, sub brown sugar for the white, and if you happen to have golden syrup on hand then you can add a few tablespoons of that, which will add some extra golden colour. I am working on a caramel mud cake that starts with real caramel sauce as a base, but it’s still a work in progress. Hopefully I will be able to nail the recipe soon!

Thank you so much. Mud cake and I have never been friends but following your recipe to the T and also the alfoil tent and baking strips gave me a stunning cake. To do Caramel Mud can I just use Brown Sugar in place of White Sugar do you think?
